Vegan Banana Hazelnut Chocolate Chip Cardamom Bread

Banana bread with butter has always been one of my favorite breakfast treats or comfort desserts. I wanted to add a twist to the typical banana bread with walnuts & think its pretty delicious. I have a thing for cardamom & try to add it into recipes often. It reminds me of shopping at the Indian markets when I lived in nyc & would get the cardamom pods to crush open to make fresh chai tea. The flavor in the bread is very light so don’t be fooled by the powerful smell of it in the batter.

Ingredients
  • -4 ripe bananas
  • -1/2 cup soaked dates
  • -1/2 cup unsweetened apple sauce
  • -1/4 cup vegetable oil
  • -2 tsp vanilla extract
  • -1/2 cup chocolate chips
  • -1/2 cups crushed hazelnuts
  • -2¼ cup all purpose flour
  • -1¼ tsp baking powder
  • -1 tsp baking soda
  • -1/2 cup coconut sugar
  • -1 tsp cinnamon
  • -1/2 tsp cardamom powder
  • -1/2 tsp pink salt
  • I used a 9x5 glass loaf pan
Instructions
  1. Preheat oven to 350 degrees.
  2. Soak your dates in hot water (not boiling) for 15 mins then drain.
  3. Blend all your wet ingredients together (including the dates) in a high speed blender for 30 seconds.
  4. In a large bowl stir together all dry ingredients (except the chocolate chips & hazelnuts) with a large spoon until well incorporated.
  5. Pour wet ingredients into the bowl with the dry & stir until completely combined with no lumps!
  6. Gently fold in chocolate chips & hazelnuts.
  7. Spray the loaf pan with cooking spray or brush it with a little oil.
  8. Pour in the batter & top with more chips & nuts.
  9. Cook for 45-60 mins (mine took 60 mins it depends on the pan)
  10. Let cool & enjoy with your favorite plant based butter.
